Fairy Tail 's pretty good ^^
Some friends recommended it to me, and it's a great manga.
Also, I don't see Bleach or Naruto anywhere on your list ^^

Hmm...anything you don't want to read (i.e. excessive gore, excessive ecchi, or the like) or is everything fair game?

Assuming the latter, here are some addicting series:
Monster
20th Century Boys
Pluto
Great Teacher Onizuka --> may some issues with scanlation quality from what I've seen, but a must read in any case
Gantz --> can catch up to current arc in a day, seriously

I'll edit/add more later when I have time.
Also, One Piece is one I'd recommend, but since the other two of the big three aren't what you want, I don't know if you'd like it.

Pumpkin Scissors - a post-war manga that has a kick ass plot (not unlike FMA)

Kanojo o Mamoru 51 no Houhou--survival, some romance, about earthquake in tokyo
Re:Birth - The Lunatic Taker--oh god the first chapter was so awesome, same mangaka who did freezing
Aishiteruze Baby--sweet romance shoujo
check out works by [SAHARA Mizu] such as Hoshi no Koe and Watashitachi no Shiawase na Jikan--both of them are so damn good that i read her other less known works which were not bad either. so try out her works.
Zippy Ziggy--good shounen with a awesome protagonist who is basically a liar, for a change the hero is not a noob.
Break Blade--for me one of the better mecha mangas out there with good art, ok plot and a likeable protagonist
My Hero!--just started scanlating, its sorta like Monkey High except the girl here is not as beautiful or rich. The guy is normal well sort of he is like really madly in love and not a bishie and conisdering its a shoujo thats rare lol. Its pretty good so far so try it out and see.
